Korea has 4 seasons. In the summer, the weather is incredibly hot and humid. Luckily, Koreans eat a delicious dessert called "bingsu" to keep cool. Bingsu typically consists of shaved ice, one scoop of ice cream, some kind of fruit, red bean, and rice cake. A really popular chain of bingsu restaurants sprung up in my city (Daejeon) this year called "Seol-Bing". I really like their bingsu!!!
Yesterday I tried blueberry cheesecake bingsu and mango yuja (yuja is like citron) bingsu. As you can see, they are enormous and are meant to be shared.

They were absolutely delicious and very refreshing too!
When my parents came to visit me in Korea last summer, they really loved bingsu. My mom and I would only eat one meal a day and then go out for bingsu to cool off!
This past visit back in Minnesota, my family and I tried to recreate our own version of bingsu.
